Une vingtaine de jeunes venus de toute la France, sous l&rsquo;\u0153il des repr\u00e9sentants de la Coop\u00e9rative Isigny Sainte-M\u00e8re. Et au milieu de tous ces continentaux : deux apprentis du Lyc\u00e9e H\u00f4telier Christian Antou, venus de 9 000 kilom\u00e8tres.<\/p>\n<p><strong>Adan Margelidon et Rahime Attoumani n&rsquo;ont pas fait le voyage pour participer. Ils ont fait le voyage pour gagner.<\/strong><\/p>\n<hr \/>\n<h3>Ce que le concours demande<\/h3>\n<p>L&rsquo;\u00e9preuve est double : r\u00e9aliser 12 croissants classiques au beurre d&rsquo;Isigny AOP, et 12 viennoiseries cr\u00e9atives pr\u00e9sent\u00e9es sur assiette de dessert.<\/p>\n<p>Le croissant, \u00e7a a l&rsquo;air simple. \u00c7a ne l&rsquo;est pas. Xavier Bordet, vice-pr\u00e9sident de la Conf\u00e9d\u00e9ration nationale de la boulangerie et membre du jury, le dit clairement : \u00ab\u00a0C&rsquo;est s\u00fbrement la plus technique des viennoiseries.\u00a0\u00bb Visuel, technique, r\u00e9gularit\u00e9, coupe int\u00e9rieure, go\u00fbt. Cinq crit\u00e8res. Z\u00e9ro marge d&rsquo;erreur. \u00ab\u00a0Il faut avoir un juste \u00e9quilibre entre le beurre et la p\u00e2te, afin d&rsquo;avoir un beau volume et une belle couleur, ainsi que ce feuillet\u00e9.\u00a0\u00bb<\/p>\n<p>Sur l&rsquo;\u00e9preuve cr\u00e9ative, c&rsquo;est une autre comp\u00e9tence qui entre en jeu : l&rsquo;invention, le sens du dressage, la capacit\u00e9 \u00e0 raconter quelque chose dans une assiette.<\/p>\n<p><strong>C&rsquo;est l\u00e0 que nos deux R\u00e9unionnais ont frapp\u00e9. \ud83d\udca5<\/strong><\/p>\n<hr \/>\n<h3>Coco, mangue, vanille : La R\u00e9union dans un croissant \ud83e\udd65\ud83e\udd6d\u2728<\/h3>\n<p>Adan et Rahime ont pr\u00e9sent\u00e9 une viennoiserie construite autour des saveurs de l&rsquo;\u00eele : coco, mangue, vanille. Pas un clin d&rsquo;\u0153il folklorique. Un vrai parti pris technique et gustatif, travaill\u00e9, ma\u00eetris\u00e9, dress\u00e9 avec la pr\u00e9cision d&rsquo;un dessert de restaurant gastronomique.<\/p>\n<h3><span style=\"color: #800000\"><strong>Le jury a tranch\u00e9.<\/strong><\/span><\/h3>\n<h3><span style=\"color: #800000\"><strong>\ud83e\udd47 1\u00e8re place : Adan Margelidon \ud83e\udd48 2\u00e8me place : Rahime Attoumani<\/strong><\/span><\/h3>\n<h3><span style=\"color: #800000\"><strong>Deux R\u00e9unionnais. Le podium entier d&rsquo;une \u00e9preuve. \u00c0 la finale nationale fran\u00e7aise.<\/strong><\/span><\/h3>\n<hr \/>\n<h3>Derri\u00e8re le podium, un homme \ud83d\udc68\u200d\ud83c\udfeb<\/h3>\n<p>Ces r\u00e9sultats ne tombent pas du ciel. Derri\u00e8re Adan et Rahime, il y a <strong>Laurent Mang<\/strong>, professeur de boulangerie au Lyc\u00e9e H\u00f4telier Christian Antou, qui les a form\u00e9s et entra\u00een\u00e9s jusqu&rsquo;\u00e0 ce niveau. Des heures de travail, des fourn\u00e9es recommenc\u00e9es, des gestes r\u00e9p\u00e9t\u00e9s jusqu&rsquo;\u00e0 ce qu&rsquo;ils soient parfaits. C&rsquo;est lui qui a transmis l&rsquo;exigence.<\/p>\n<p><strong>Beno\u00eet Verel<\/strong> a fait le d\u00e9placement jusqu&rsquo;en Normandie pour accompagner les deux candidats. \u00catre l\u00e0, \u00e0 9 000 kilom\u00e8tres de La R\u00e9union, le jour J. \u00c7a compte.<\/p>\n<p><strong>\u00c0 tous les deux : merci. \ud83d\ude4f<\/strong><\/p>\n<hr \/>\n<h3>9 000 kilom\u00e8tres. Le podium quand m\u00eame. \ud83c\udf0a<\/h3>\n<p>Adan et Rahime ont repr\u00e9sent\u00e9 le Lyc\u00e9e H\u00f4telier Christian Antou face aux meilleurs apprentis boulangers de m\u00e9tropole. Normands, Nordistes, R\u00e9unionnais : ils ont prouv\u00e9 que la distance ne change rien au niveau d&rsquo;exigence, ni \u00e0 la qualit\u00e9 de la formation dispens\u00e9e ici, \u00e0 La R\u00e9union.<\/p>\n<p>Ce r\u00e9sultat, c&rsquo;est le leur. C&rsquo;est aussi celui de Laurent Mang, qui les a pr\u00e9par\u00e9s \u00e0 ce niveau.
