Il y obtient trois Toques au Gault & Millau et 1* Michelin. Il ouvre ensuite l\u2019Esprit Culinaire \u00e0 Ch\u00e2teaurenard et r\u00e9colte une nouvelle Toque au Gaud & Millau. Puis il inaugure l\u2019Esprit de la Violette \u00e0 Aix-en-Provence, o\u00f9 il d\u00e9croche le Gaud & Millau d\u2019Or et une nouvelle \u00e9toile Michelin. Apr\u00e8s un bref retour \u00e0 La R\u00e9union en 2015 \u00e0 l\u2019Akoya H\u00f4tel & Spa, il exerce comme consultant \u00e0 l\u2019\u00e9tranger.
