Il enrichit ensuite son CV d\u2019un nouveau CAP de Chocolatier-confiseur obtenu \u00e0 l\u2019Institut national de laBoulangerie-P\u00e2tisserie de Rouen et suit une formation de douze mois \u00e0 l\u2019\u00e9cole Len\u00f4tre, dont il sort dipl\u00f4m\u00e9 avec mention Tr\u00e8s Bien. Il d\u00e9bute sa carri\u00e8re \u00e0 la P\u00e2tisserie Ta\u00eflou, fond\u00e9e \u00e0 La R\u00e9union par sa maman. Puis il s\u2019envole pour Paris, o\u00f9 il sera successivement responsable de production chez Maison Lendemaine, second en p\u00e2tisserie au restaurant La Grande Cascade (1* Michelin) et chef de production en p\u00e2tisserie chez Daloyau.
