Lors d\u2019un concours organis\u00e9 durant la F\u00eate de la Gastronomie 2016, il est \u00e9lu \u00ab Meilleur espoir de l\u2019oc\u00e9an Indien \u00bb. Il s\u2019envole alors pour Paris afin de passer un BTS H\u00f4tellerie-Restauration. Tr\u00e8s vite, il devient commis de cuisine puis demi-chef de partie du chef Thierry Marx au restaurant Le Cam\u00e9lia de l\u2019h\u00f4tel Mandarin Oriental (palace 5*, \u00e0 Paris). Il int\u00e8gre ensuite l\u2019autre restaurant de l\u2019h\u00f4tel, le Sur Mesure (2* Michelin), toujours en tant que demi-chef de partie. Dans le m\u00eame temps, il s\u2019adonne \u00e0 son autre passion pour la botanique en cultivant un potager d\u2019herbes aromatiques sur le toit du palace. Depuis d\u00e9but 2023, il est de retour dans son \u00eele avec un projet nomm\u00e9 \u00ab Renaissance \u00bb.
